Someone emailed me and asked what Hoppin' John is....
I have no idea why it is called that?
But Hoppin' John is only
Blackeye Peas
Rice
Smoked Sausage
sliced onion on top
I always make cornbread muffins with it....
Put your peas on.....with LOTS of water...I usually cook a whole bag of peas....( and just for side note? I normally doctor them with minced garlic and crushed red pepper and season salt and bacon....do whatever you like to your own..just do it to your own taste)
When they are done and still "soupy"? I slice 2 lbs ( 2 links) of smoked sausage and throw in the pot....
I cook 2 cups of rice......instant is fine and easiest....
Put your rice in the bottom of the bowl....
Dip out the peas and sausage and put on top the rice....
Sliced or diced onion on top.....yellow onion or green onion whichever you prefer....2 cornbread muffins and dinner is served! :)
My KIDS love it...
My husband? Not so much....which is why we have when he isnt home...lol....
Yeah you're talking about food now. I want some. I like cornbread too.

Sounds good to me! We had keilbasa and white beans last night. I usually buy canned beans but I'm going to have to quit. They just don't taste as good.
